Rhubarb Fool

I love rhubarb fool - sugar is a very personal taste with this fruit and you'll just have to keep testing it to get it exactly to your liking but at present the fruit is beautifully mild.                 

If you make meringues - they are yum with this recipe.

Rhubarb Fool

4-5 sticks rhubarb

2oz sugar

Yoghurt, custard and or cream 

Just a little water and soft cook the fruit and let cool.
Add equal amounts of plain yoghurt,custard and or cream, and stir all together. Adjust sugar to taste.
